Buttermilk Pancakes

Today's "Monday's for Moms" recipe comes from Michelle Aliotti, co-owner of Mr. Rooter Plumbing of Santa Cruz. Her buttermilk pancakes are fluffy, light and easy to make. Add some fresh fruit to make it an ideal breakfast for summer.

  • 2 cups all-purpose flour
  • 1 ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ tablespoons vegetable oil
  • 2 eggs
  • 2 cups buttermilk

Beat with mixer, just until combined. Cook on medium high heat skillet. With spatula, flip over and cook other side when bubbles have formed on top and edges are lightly golden. Serve with your favorite syrup or fresh fruit.
