One of my great joys in life is food. I like to search out new foods, shop for fresh ingredients and look for recipes to try out. Whether it is on a relaxing day off or a quick meal after a busy work day, we all need to get dinner on the table. At times, though, coming up with new ideas can be difficult. After all, everyone gets tired of meatloaf and tacos week after week. That's why I'm excited Mr. Rooter Plumbing is bringing you a variety of our tried and true recipes. Here is one of my favorites: [recipe title='Kale, Bean and Sausage Soup']
  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 1 cup diced celery
  • 1/2 cup diced carrot
  • 12 ounces Italian sausage (mild or hot)
  • 2 cloves garlic, minced
  • 1 bunch kale, chopped
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) beans of your choose (kidney, northern, chickpeas, navy) drained and rinsed
  • salt and pepper to taste
  • Parmesan cheese (optional)
Preparation: In a large pot heat olive oil over medium-high heat. Add onions, celery, carrots and sausage. Sauté, stirring, until onion is just tender. Reduce heat to medium-low. Add garlic and cook. Add broth and beans and cook for 15 minutes avoiding any boil. Add salt and pepper. 5 minutes before serving add chopped kale and stir until it wilts. Can top with a sprinkle of Parmesan."
